Recipe: Tomato, Cucumber and Pineapple Salad
Prep Time: 15 minutes
Cook Time: 5 minutes
1 Pint (2 Cups) cherry tomatoes, halved
½ Pineapple, cut into 1/2 inch chunks
1 Cucumber, quartered and sliced
½ Cup red onion, diced
1 Tablespoon mint, finely chopped
Black pepper, to taste
For the dressing:
4 Tablespoons distilled vineagar
4 Tablespoons brown sugar
1 Teaspoon kosher salt
1. Combine tomatoes, pineapple, cucumber and red onion in mixing bowl.
2. Combine the dressing ingredients in a pot on low heat. Warm until all sugar and salt dissolve. Let the dressing cool completely.
3. Add dressing, mint and pepper to salad mixture and toss lightly. Chill before serving.
Serving Suggestion: This salad is the perfect accompaniment for anything off of the grill.
