Steamed Salmon with Tomatillo
I can't take any credit for this recipe. My mom and her friend treated us to one of the most delicious homemade meals we've ever eaten and I just had to share with all of you.
Prep Time: 10 minutes
Cook Time: 25 minutes
Servings: 2-4
1 Pound salmon
2 Cloves garlic, chopped
1 ½ Tablespoons olive oil
1 ½ Teaspoon rosemary, crushed
1 ½ Cups tomatillo salsa
Juice of 1 lemon
Sea salt, to taste
Black pepper, to taste
Disposable aluminum pan
Aluminum foil
1. Heat your grill to medium high.
2. Blend all ingredients (except salmon) well in the pan.
3. Bathe salmon with the liquid mix, then set it skin side down for cooking. My mom suggests adding an additional generous spoonful of tomatillo atop the fish for good measure.
4. Cover the pan tightly with foil and place on hot grill for 20 to 25 min. DO NOT PULL BACK THE FOIL TO CHECK ON THE FISH. You'll totally interrupt the steaming action that makes this salmon so flavorful and juicy.
5. Remove the pan and let it cool for 3-5 minutes to lock in the juices.
6. Careful when you pull back the foil. Steam can burn!
Note: Please buy quality salmon if you plan to make this dish. To get the true flavor experience you absolutely must invest.
Serving Suggestion: Serve with a simple green salad and some baguette bread. You'll need something to sop up the juice!
