Mis Galletas
When life seems hard I gravitate toward baking something delicious. Not necessarily to eat it, but because baking takes patience, precision and evokes a sense of calm. You have to slow down and focus or you risk ruining your final product. I know it's trivial, but it seems to work.
Here's recipe for something baked and delicious (and not too difficult) that will warm up your heart and soul just a little bit. 'Mis Galletas' simply means 'My Cookies'. This recipe is a sentimental original from my mom's handwritten recipe book which makes it all the more comforting. Enjoy.
Prep Time: 15 minutes
Cook Time: 8-12 minutes
Servings: Makes about 3 dozen cookies
3 Cups Corn Flakes
1 Can sweetened condensed milk
½ Cup peanut butter
¾ Cup coconut flakes
¾ Cup chocolate chips (optional)
1. Heat oven to 350º.
2. Combine all ingredients in a mixing bowl.
3. Put heaping spoonfuls onto ungreased cookie sheet.
4. Bake for 8-12 minutes. When edges of the cookies brown they're ready.
5. Remove them from the sheet immediately and lay them on a wire rack to cool.
6. Try not to eat all of them.
NOTE: If the mixture is not holding its form just add more Corn Flakes.
